Chocolate Chip Hot Cross Buns

It is Easter!! Today is my first day of my Easter Holiday! WOOHOO!!!! I miss Hot Cross Buns from New Zealand. At school, I have been singing the Hot Cross Buns song with my students. I MISS HOT CROSS BUNS!!! Back in New Zealand, I used to go to Bakers Delight to get Hot Cross Buns... I can eat 6 in one go... ha ha ha... In Hong Kong, Hot Cross Buns isn't that popular so I would have to make my own...



Chocolate Chip Hot Cross Buns 
(makes 12)

Ingredients: Hot Cross Buns
330g bread flour
85g wheat flour (can replace with bread flour)
60g sugar
3/4 tsp cinnamon
3/4 tsp salt
9g yeast
1 egg
130g water
125g flour paste (tangzhong)
30g butter (softened)
50g raisins
50g chocolate chips

Ingredients: Cross Paste
3 Tbsp bread flour
2 - 3 Tbsp water

Method:
Preparation: Don't forget to make the tangzhong beforehand and cool down to room temperature. I used 25g bread flour with 125g water to make my tangzhong to make my Hot Cross Buns. Check out my tangzhong recipe here!
  1. Combine the bread flour, wheat flour, cinnamon and sugar. Make a well in the middle. Place the salt and yeast on the side. Put the water, egg and flour paste in the middle. 
  2. Knead the dough until it is nearly incorporated, add the softened butter. Knead until combined.
  3. Add the raisins and chocolate chips. Knead until the dough becomes elastic and smooth. The dough is ready when you can stretch the dough to a thin membrane.
  4. Grease a bowl with some oil, put the dough inside for the first round of proofing. Cover with some cling wrap and proof until double in size. It takes around 40 minutes but depends on the humidity and temperature. I proof in my oven at 35C. When the dough has doubled in volume,check if the dough is ready or not. Insert your floured finger into the middle of the bread dough. If the hole stays there then it is ready!
  5. Push the air out of the bread dough. Divide the bread dough into 12 equal portions and shape them into round balls. Cover the bread dough with cling wrap and allow the bread dough to rest for 15 minutes.
  6. Proof the bread dough for the second time until it has doubled in volume. Again, I proofed my bread dough in the oven at 35C.
  7. Prepare the cross paste by combining the bread flour and water. Add the water gradually. Mix until the mixture is thick. Put the cross paste into a piping bag.
  8. Brush whisked egg onto the buns and pipe a cross on the surface of the buns. 
  9. Bake in a pre - heated oven at 160C for 13 - 15 minutes.

  1. Your recipe method did not include egg. When I saw the video clip, I saw the egg was added in method 1. Too late to add, the bread looks pale, but tasted good
