Vanilla Cupcakes

I haven't made cupcakes for a very long time! I made some for my friend's birthday and he really liked it! Some of you asked for the recipe so here it is!! I am not particularly good at making cupcakes but hope you will like this recipe! :)

Vanilla Cupcakes
(makes 12 cupcakes)

Ingredients: Cupcakes
125g butter (softened)
170g sugar
2 eggs
220g cake flour (sifted)
2 tsp baking powder (sifted)
1 tsp vanilla essence
180g milk

Ingredients: Buttercream Frosting
170g butter (softened)
340g icing sugar (sifted)
2 Tbsp water

Sprinkles for cupcake decoration

Method:
  1. Cream the butter and sugar until light and fluffy.
  2. Add the eggs one at a time and beat well after each addition.
  3. Add sifted flour and baking powder and mix until just combined
  4. Add the milk and vanilla essence. Mix until just combined.
  5. Bake in a pre - heated oven at 180C for 18 - 20 minutes. Leave in the muffin tray for 5 minutes before transferring them onto a wire rack. Let the cupcakes cool completely.
  6. Prepare the buttercream frosting by beating the butter until smooth. Add icing sugar in a few portions and beat well. Add the water slowly at the end and beat until light a fluffy. Try pipe the buttercream frosting before piping them onto the cupcakes.
  7. Pipe the buttercream frosting onto the cupcakes when they have completely cooled down. Piping buttercream frosting on warm or hot cupcakes will cause the buttercream frosting to melt (NOT NICE!).
  8. Decorate the cupcakes with some sprinkles of your own choice.

Here is the video!!
