Vanilla Cupcakes
(makes 12 cupcakes)
Ingredients: Cupcakes
125g butter (softened)
170g sugar
2 eggs
220g cake flour (sifted)
2 tsp baking powder (sifted)
1 tsp vanilla essence
180g milk
Ingredients: Buttercream Frosting
170g butter (softened)
340g icing sugar (sifted)
2 Tbsp water
Sprinkles for cupcake decoration

Method:
- Cream the butter and sugar until light and fluffy.
- Add the eggs one at a time and beat well after each addition.
- Add sifted flour and baking powder and mix until just combined
- Add the milk and vanilla essence. Mix until just combined.
- Bake in a pre - heated oven at 180C for 18 - 20 minutes. Leave in the muffin tray for 5 minutes before transferring them onto a wire rack. Let the cupcakes cool completely.
- Prepare the buttercream frosting by beating the butter until smooth. Add icing sugar in a few portions and beat well. Add the water slowly at the end and beat until light a fluffy. Try pipe the buttercream frosting before piping them onto the cupcakes.
- Pipe the buttercream frosting onto the cupcakes when they have completely cooled down. Piping buttercream frosting on warm or hot cupcakes will cause the buttercream frosting to melt (NOT NICE!).
- Decorate the cupcakes with some sprinkles of your own choice.
