Anyway, you probably know that I love pound cakes very much as I have many pound cake recipes... In fact, this cake is slightly bigger than my normal pound cakes!
Lemon Pound Cake
(makes a 22cm cake loaf)
1 lemon
200g butter (softened)
200g sugar
4 eggs
200g cake flour (sifted)
2 tsp baking powder

2 tsp baking powder
Method:
- Using the lemon, make lemon zest and squeeze out the juice.
- Cream the butter until it is soft and pale yellow colour.
- Add the sugar in three portions. Beat well after each addition.
- Add the eggs one at a time. Beat well after each addition to avoid curdling.
- Add the sifted flour and mix well.
- Add the lemon juice and lemon zest.
- Bake in a pre - heated oven at 180C for 55 - 60 minutes. After around 30 minutes, slice gently on top of the cake so it can crack nicely on the top.

I always thought Pound cake is a dense cake, until I tried your recipe. It is so fluffy and velvety! Your recipes never failed me. I just reduced the sugar to 180gm and will be baking this for all the mothers i know in the coming Mother’s Day. Thanks!
