Lemon Pound Cake

Summer holiday is over and I just returned from Auckland, New Zealand. I had an awesome trip, ate lots of food and met all my old friends! YAY!!

Anyway, you probably know that I love pound cakes very much as I have many pound cake recipes... In fact, this cake is slightly bigger than my normal pound cakes!

Lemon Pound Cake
(makes a 22cm cake loaf)
1 lemon
200g butter (softened)
200g sugar
4 eggs
200g cake flour (sifted)
2 tsp baking powder

  1. Using the lemon, make lemon zest and squeeze out the juice.
  2. Cream the butter until it is soft and pale yellow colour.
  3. Add the sugar in three portions. Beat well after each addition.
  4. Add the eggs one at a time. Beat well after each addition to avoid curdling.
  5. Add the sifted flour and mix well.
  6. Add the lemon juice and lemon zest.
  7. Bake in a pre - heated oven at 180C for 55 - 60 minutes. After around 30 minutes, slice gently on top of the cake so it can crack nicely on the top.

  1. I always thought Pound cake is a dense cake, until I tried your recipe. It is so fluffy and velvety! Your recipes never failed me. I just reduced the sugar to 180gm and will be baking this for all the mothers i know in the coming Mother’s Day. Thanks!
