Blueberry and Cream Cheese Muffins
(makes 12 muffins)
340g cake flour
2 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
100g blueberries
140g butter (softened)
220g sugar
2 eggs
1 tsp vanilla extract
320g natural plain yoghurt
100g cream cheese (12 cubes)

Method:
Preparation: Grease the top of the muffin tray. Line the muffin tray with paper cases.

- Mix together the cake flour, baking powder, baking soda and salt. Set aside.
- Mix 1 tablespoon of the flour with the blueberries. Set aside.
- Cream together the butter and sugar.
- Add the eggs one at a time. Add the vanilla extract. Combine well.
- Add the butter mixture and yoghurt into the flour mixture. Mix well.
- Using a spatula, gently fold in the blueberries. Be careful not to pop them.
- Scoop mixture evenly between the paper cases. Top each muffin with a cream cheese cube.
- Bake in a pre - heated oven at 190C for 20 - 25 minutes or until an inserted toothpick comes out clean in the center of a muffin.
