Blueberry and Cream Cheese Muffins

It is still very hot in Hong Kong but it is getting cooler. I still don't like staying in the kitchen for too long so muffins seem to be a nice thing to make. Moreover, my friend got me a new ice cream scoop. Perfect for making muffins!!

Blueberry and Cream Cheese Muffins
(makes 12 muffins)
340g cake flour
2 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
100g blueberries
140g butter (softened)
220g sugar
2 eggs
1 tsp vanilla extract
320g natural plain yoghurt
100g cream cheese (12 cubes)

Preparation: Grease the top of the muffin tray. Line the muffin tray with paper cases.
  1. Mix together the cake flour, baking powder, baking soda and salt. Set aside.
  2. Mix 1 tablespoon of the flour with the blueberries. Set aside.
  3. Cream together the butter and sugar.
  4. Add the eggs one at a time. Add the vanilla extract. Combine well.
  5. Add the butter mixture and yoghurt into the flour mixture. Mix well.
  6. Using a spatula, gently fold in the blueberries. Be careful not to pop them.
  7. Scoop mixture evenly between the paper cases. Top each muffin with a cream cheese cube.
  8. Bake in a pre - heated oven at 190C for 20 - 25 minutes or until an inserted toothpick comes out clean in the center of a muffin.
