Double Chocolate Muffins

I haven't been able to film lately because of assignments and group presentations for uni and my tutor had to come and watch me teach at school. ><" School has been quite busy too because of student reports. Anyway... I am finally free from stress and Christmas holiday is just in a few days... hahaha...


Double Chocolate Muffins
(makes 12 muffins)
280g cake flour
60g cocoa powder
2 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
140g butter (softened)
220g sugar
2 eggs
1 tsp vanilla extract
260g natural plain yoghurt
150g chocolate (coarsely chopped)

Method:
Preparation: Grease the top of the muffin tray. Line the muffin tray with paper cases.
  1. Mix together the cake flour, coca powder, baking powder, baking soda and salt. Sift the mixture and set aside.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time. Add the vanilla extract. Combine well.
  4. Add the butter mixture and yoghurt into the flour mixture. Mix well.
  5. Using a spatula, gently fold in 3/4 of the chocolate. 
  6. Scoop mixture evenly between the paper cases. Top each muffin with the remaining chocolate.
  7. Bake in a pre - heated oven at 190C for 20 - 25 minutes or until an inserted toothpick comes out clean in the center of a muffin.
I love muffins very much! A new recipe to my muffins section! Maybe I should bake some savoury muffins!!
