Double Chocolate Muffins
(makes 12 muffins)
280g cake flour
60g cocoa powder
2 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
140g butter (softened)
220g sugar
2 eggs
1 tsp vanilla extract
260g natural plain yoghurt
150g chocolate (coarsely chopped)

Method:
Preparation: Grease the top of the muffin tray. Line the muffin tray with paper cases.

- Mix together the cake flour, coca powder, baking powder, baking soda and salt. Sift the mixture and set aside.
- Cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time. Add the vanilla extract. Combine well.
- Add the butter mixture and yoghurt into the flour mixture. Mix well.
- Using a spatula, gently fold in 3/4 of the chocolate.
- Scoop mixture evenly between the paper cases. Top each muffin with the remaining chocolate.
- Bake in a pre - heated oven at 190C for 20 - 25 minutes or until an inserted toothpick comes out clean in the center of a muffin.
I love muffins very much! A new recipe to my muffins section! Maybe I should bake some savoury muffins!!
