Apple Crumble Muffins

I still have one an essay to do but I decided to make a video first. It has been a while since I have uploaded a video on YouTube. Yes, I have been very busy with work and university. No more lectures, assignments and essays!! It's time for me to focus on baking!! WOOHOO!!!

I love baking these muffins because they smell so good when they are cooking in the oven. 


Apple Crumble Muffins
(makes 12 muffins)

Ingredients - Apple Crumble:
30g walnuts
30g butter (cold and cubed)
1 tsp ground cinnamon
40g cake flour
40g brown sugar

Ingredients - Muffin:
2 small apples
340g cake flour
2 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
140g butter (softened)
180g brown sugar
2 eggs
260g natural plain yoghurt

Method - Apple Crumble:
  1. Chop the walnuts into small pieces.
  2. Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs.
  3. Stir in the chopped walnuts and brown sugar. Set aside.
Method - Muffins:
Preparation: Grease the top of the muffin tray. Line the muffin tray with paper cases.
  1. Mix together the cake flour, baking powder, baking soda, salt and ground cinnamon. Set aside.
  2. Peel, core and dice the apples. Put the diced apples in some water to stop them from browning. Set aside.
  3. Cream together the butter and sugar.
  4. Add the eggs one at a time. Combine well.
  5. Add the butter mixture and yoghurt into the flour mixture. Mix well.
  6. Using a spatula, gently fold in the chopped apples.
  7. Scoop mixture evenly between the paper cases. Top each muffin with the apple crumble mixture.
  8. Bake in a pre - heated oven at 190C for 20 - 25 minutes or until an inserted toothpick comes out clean in the center of a muffin.
