I love baking these muffins because they smell so good when they are cooking in the oven.
Apple Crumble Muffins
(makes 12 muffins)
Ingredients - Apple Crumble:
30g walnuts
30g butter (cold and cubed)
1 tsp ground cinnamon
40g cake flour
40g brown sugar

2 small apples
340g cake flour
2 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
140g butter (softened)
180g brown sugar
2 eggs
260g natural plain yoghurt

Method - Apple Crumble:
Preparation: Grease the top of the muffin tray. Line the muffin tray with paper cases.
- Chop the walnuts into small pieces.
- Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs.
- Stir in the chopped walnuts and brown sugar. Set aside.

- Mix together the cake flour, baking powder, baking soda, salt and ground cinnamon. Set aside.
- Peel, core and dice the apples. Put the diced apples in some water to stop them from browning. Set aside.
- Cream together the butter and sugar.
- Add the eggs one at a time. Combine well.
- Add the butter mixture and yoghurt into the flour mixture. Mix well.
- Using a spatula, gently fold in the chopped apples.
- Scoop mixture evenly between the paper cases. Top each muffin with the apple crumble mixture.
- Bake in a pre - heated oven at 190C for 20 - 25 minutes or until an inserted toothpick comes out clean in the center of a muffin.
