Cheesecake Brownie
(makes an 8x8 inch brownie)
Ingredients - Brownie:
50g cocoa powder
45g cake flour
1/2 tsp baking powder
100g chocolate
100g butter (softened)
140g sugar
2 eggs

250g cream cheese (softened)
60g sugar
1 egg

Method - Brownie:
- Mix the cake flour, baking powder and cocoa powder together. Sift the mixture and set aside.
- Melt the chocolate over some hot water. Set aside.
- Cream the butter and sugar together until it is light and fluffy.
- Add the eggs one at a time and combine well.
- Add the melted chocolate and combine well.
- Add the flour into the mixture and fold. It should have a mousse-like texture.
- Reserve three big spoonfuls of the brownie batter. Pour the rest into the pan and spread it out evenly.
- Beat the cream cheese and sugar until smooth and creamy.
- Add the egg and beat until just combined.
- Pour the cheesecake batter over the top of the brownie batter. Spoon 16 dollops of the reserved brownie batter on top of the cheesecake batter.
- Using a knife, chopstick or skewer, swirl the two mixtures together to create the marble effect.Be careful not to mix and over swirl the two mixtures.
- Bake in a pre - heated oven at 150C for 35 - 40 minutes or until an inserted toothpick comes out with wet crumbs.
