Green Tea (Matcha) Mousse Cheesecake
(makes 8" cheesecake)
Ingredients - Base:
140g digestive biscuits
80g butter
Ingredients - Filling:
140g hot water
10g green tea powder
140g cold water
10g gelatin
500g whipping cream
450g cream cheese (softened)
120g sugar
Method - Base:
Preparation: Line the base of a 8" cake pan.

- Using a ziploc bag and a rolling pin, crush the digestive biscuits.
- Mix the butter and crushed digestive biscuits together until it reaches the wet sand consistency.
- With the back of a spoon, press the mixture evenly over the base of the prepared cake tin and chill in the fridge for 20 minutes.
Method - Filling:
- Stir the green tea powder into the hot water, set aside.
- Sprinkle the gelatin into the cold water, set aside.
- Whip the cream to stiff peaks, set aside.
- Beat the sugar and cream cheese together until it is smooth and creamy.
- Stir in the green tea into cream cheese.
- Put the gelatine mixture over some hot water and stir until the gelatine crystals have dissolved. Stir into the cheesecake filling.
- Fold in the whipped cream until smooth.
- Pour the cheesecake filling into the prepared cake tin. Chill overnight or until set.
If you are a green tea fan, this cheesecake is PERFECT! It is very refreshing and it isn't too heavy to have as a dessert during summer. This cheesecake is quite soft and it has the mousse like texture. You can add an extra 5g gelatin to this recipe if you want it to be more cheesecake-like.
