Berry Jam Swirl Muffins
(makes 12 muffins)
140g butter (softened)
220g sugar
340g cake flour
2 1/2 tsp baking powder
1 tsp baking soda
2 eggs
300g yoghurt
some berry jam

Method:
Preparation: Grease the top of the muffin tray. Line the muffin tray with paper cases.

- Mix together the cake flour, baking powder and baking soda. Sift the mixture and set aside.
- Cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time. Combine well after each addition.
- Add the butter mixture and yoghurt into the flour mixture. Mix well.
- Scoop mixture evenly between the paper cases. Drop a teaspoon of berry jam not top of the muffin batter and press it down. Using a chopstick or skewer, gently swirl the jam into batter so the jam is incorporating throughout the batter and spreading nicely on the top.
- Bake in a pre - heated oven at 190C for 20 - 25 minutes or until an inserted toothpick comes out clean in the center of a muffin.
